Vegan Banana Cake Recipe from Oh She Glows
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1/2 cup vegan butter, melted
- 3/4 cup coconut sugar or organic cane sugar
- 1 teaspoon pure vanilla extract
- 1/3 cup almond milk
- 3 ripe bananas, mashed
- 1/2 cup chopped walnuts (optional)
Instructions
1. Preheat oven to 350F. Grease an 8-inch round cake pan and line the bottom with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, and salt.
3. In a large bowl, whisk together the melted butter, sugar, and vanilla until smooth. Add the almond milk and mashed bananas and whisk until combined.
4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix. Gently fold in the chopped walnuts, if using.
5. Pour the batter into the prepared pan and bake for 40-45 minutes, until a toothpick inserted into the center of the cake comes out clean.
6. Let the cake cool completely before serving. Enjoy!
